Alex here, reporting for Nurse Momo. For those of you who don’t know, Morgan is doing a new grad program in the PICU at Fountain Valley Regional Hospital. Yay! Meaning she is working full time and going to school full time so she’s all kinds of busy, so until she get’s used to the insane schedule she is working, I will be putting up her recipes for her.
Since spring is here, here’s an Easter themed breakfast recipe. It’s Eggs in a Basket (otherwise known as cowboy toast, egg-in-a-hole, one eyed monster, hen in a nest, moon egg, etc.) but with an easter twist!
-One egg white and one whole egg
-Whole wheat toast,
-Asiago cheese (though really any cheese will do)
It’s a super simple recipe! You toast the bread on a skillet for about 1-2 minutes on each side, then use the cookie cutter to cut the middle out and add the eggs. Toast each side for an additional 1-2 minutes, add the cheese, and remove it from the skillet and add the avocado and salsa and whatever else tickles your fancy!
